100g Bermuda’s Best Codfish
1 Medium Onion
2 Medium Tomato
1 Garlic peg
2 stalks Scallion
¼ tsp Hot Pepper
Boil Bermuda’s Best codfish for 10 minutes.
Dice, shred or flake finely and set aside.
Chop and combine Onions, Garlic, Scallions, Hot Pepper and Tomato.
In large bowl mix the chopped Bermuda’s Best codfish, flour, and cold water to make a thin batter. Add seasoning and mix well.
Pre-heat oil in a skillet until very hot.
Spoon in the batter and fry until golden brown and crisp on both sides. Drain on towel.
Keep warm until ready to serve
