200g Bermuda’s Best Codfish
1lb boiled Ackee
2 Medium Tomato
3 Garlic peg
1 medium Tomato
¼ tsp Hot Pepper
Boil Bermuda’s Best codfish for 10 – 15 minutes, drain, flake and set aside.
Dice, shred or flake finely and set aside.
Chop and combine Onions, Garlic, Hot Pepper and Tomato.
Pre-heat oil in a skillet until very hot and then reduce to simmer. Add Seasoning, flaked Bermuda’s Best codfish, Ackee, and Black Pepper to taste, stirring to combine ingredients.
Cover the saucepan and allow to cook slowly.
