Traditional Bermuda Sunday Breakfast

Ingredients

Cod Fish & Potatoes
800g Bermuda’s Best Codfish
3lbs Potato cut
2 Avocado (cut into 16 slices)
8 Eggs hard-boiled
8 Bananas peeled

Tomato Sauce
28oz can Tomato Sauce
½ cup Onions, chopped
½ cup Pepper, chopped
¼ lb. Butter/Margarine
1/8 tsp Black Pepper
1/8 tsp Thyme

Egg Sauce
¼ lb. Butter/Margarine
2 Eggs, hard boiled
1/8 tsp Dry Mustard
Sherry (to taste)
Worcestershire Sauce (optional)
Olive Oil (optional)

 

Directions

Cod Fish & Potatoes

Soak Bermuda’s Best codfish overnight, bring to a boil and drain. Repeat boil and drain. Refill, add potatoes and boil until potatoes are cooked.

Serve on plate with 1 egg, 1 banana, and 2 slices avocado. 

Toast and jam optional. Add Tomato Sauce or Egg Sauce to this dish for extra flavor!

 

Tomato Sauce

Melt butter adding onions and pepper. Simmer until soft.

Add remaining ingredients and simmer 15 minutes.

Serve over Bermuda’s Best codfish and potatoes only.

 

Egg Sauce

Chop eggs fairly fine.

Melt butter in saucepan adding chopped eggs, mustard and sherry to taste.

Optional Worcestershire and oil may be applied directly on Bermuda’s Best codfish and potatoes.

Pour egg sauce on last.
