800g Bermuda’s Best Codfish
3lbs Potato diced.
¼ cup Parsley
1 oz. Thyme
1 tsp. Paprika
2 Eggs, beaten
1 tsp Curry Powder (optional)
Salt and Pepper to taste.

Soak Bermuda’s Best codfish overnight, bring to a boil and drain. Repeat boil and drain..
Flake fish. Refill, add potatoes and boil until potatoes are cooked. Mash Bermuda’s Best codfish and potatoes together.
Add rest of ingredients and mix thoroughly.
Make into balls or patties. Dust and fry until golden brown.
Serve balls as hor d’ oeuvres or patties on a bun!
